Coarse Bulgur is made from hard red winter wheat berries that have been hulled and processed to remove a small amount of the bran, then steamed, dried and coarsely cracked to produce a quick-cooking and nutritious grain dish.

To cook: Combine 1 cup bulgur, 1 1/2 cups water and salt in a saucepan. Bring to a simmer, then cover and cook over low heat until tender, about 12 minutes. Remove from heat; let stand, covered, 10 minutes. Fluff with a fork. Use immediately, or spread on a rimmed baking sheet to let cool.
